This quick and easy 30-minute recipe from Kraft is great for weeknight meals. It only requires about ten minutes of preparation time, and it contains cheap and easily obtainable ingredients. Kraft recommends using its brand name products, but these items could obviously be substituted for anything on hand.
The recipe from the site creates four servings, so I recommend that students scale the recipe back unless they plan to save the leftovers.

Cook rice as directed on package.
Meanwhile, heat large nonstick skillet on high heat. Add chops; cook 2 min. or until bottoms of chops are browned. Reduce heat to medium; turn chops. Sprinkle with oregano; top with peppers, dressing and tomatoes. Bring to boil; simmer on low heat 12 min. or until chops are done (160ºF).
Spoon rice onto serving plates; top with chops. Cover to keep warm. Cook vegetable mixture on high heat 1 to 2 min. or until vegetables are tender and sauce is thickened, stirring occasionally. Spoon over chops; top with cheese.

I would definitely recommend marinating the pork chops for flavor–I think this would solve the “plainness” issue that some reviewers brought up. Several reviewers added onion, and I think that adding other vegetables into the mix would definitely improve the dish!
